The Windsor Oaks Vineyard is on the western edge of the Chalk Hill Appellation directly opposite, the Russian River Valley. Sonoma County is volcanic in origin. Chalk Hill got more than its share of volcanic ash, light and chalky, and it is reflected in the fruit. This terroir is perfect for Sonoma style Sauvignon Blanc: bright and sassy, with body and complexity. The 2009 Sauvignon Blanc is fermented entirely in a stainless tank. We find ways to accentuate the uniqueness of the vineyard. We started the fermentation on native yeast, cooled the wine until the fermentation slowed to a snail's pace and after a couple of weeks introduced a pure strain of yeast. The result is more mouth feel and greater complexity.
